The coffee is processed using the Natural Anaerobic method. Initially, defective cherries are removed, and only the densest cherries are selected. These cherries undergo anaerobic fermentation in a sealed tank for 168 hours. After the 168-hour fermentation, the cherries develop a deep reddish-brown hue and are then transferred to African beds, where they are carefully dried over 15–20 days. This slow drying process enhances the coffee’s natural sweetness. The drying is not continuous; when the moisture level reaches approximately 19%, the process is temporarily halted. The cherries are then moved indoors, placed in bags, and undergo a second fermentation before drying resumes the following day. This meticulous approach results in a coffee with honey-like sweetness and pronounced floral notes. Maragogipe is a rare mutation of the Typica variety and is known for having the largest coffee seeds among all varieties. Typically, larger seeds require more nutrients, and the flavor can sometimes become flat. However, this Maragogipe has been cultivated with ample nutrients, allowing its rich and complex flavors to shine. Moreover, the coffee undergoes a unique fermentation process using Aspergillus oryzae, a type of koji mold. First, the koji mold is cultivated over four days on the dried coffee pulp and outer skin.
